Cardoon is grown as an annual in colder climates. It forms a large rosette of silvery-green, deeply cut leaves. The blanched leaf stalks can be eaten. Need a cool period of 10-11 days below 10°C, to induce flowering in the 1st year, but won’t survive a hard frost. Harvesting Tip: Harvest stalks when young and tender; blanch stalks before eating. Storage Tip: Store blanched stalks in the refrigerator for up to a week. |
