Corn Salad Popular leafy green in Europe. Very early maturing. Robust with high yields. Round, thick leaves with wide leaf blade. Leaves stay round and succulent. Companion plants: Cabbage, Carrot, Turnip, Leek, Viola. Far from: Onion. Planting tip: Direct sow seeds in early spring as soon as soil can be worked or early fall for late fall harvest. Prefers cooler temperatures and moist soil. Sow 3 seeds per inch 1/4” deep in rows 12″ apart. Thin to 2” apart. Prolong the season by planting every two weeks throughout spring. Harvesting tip: Bunch tiny groupings of leaves together and cut 2-1-2′′ above the ground with a sharp knife. Plants grow back after cutting. A fifty-foot planted row will yield a large bowl of delicate leaves plucked once a week. Storage tip: Keep in a plastic bag in the vegetable section of the freezer for up to 3 days. |
