A hardy, sweet-flavored parsnip with creamy-white, tender roots. It grows best in well-drained, fertile soil and cool conditions. Though slower to mature than many root crops, its rich, earthy flavor deepens after cold storage, making it ideal for autumn and winter meals. ID: 56587 | Planting Tip: Thin seedlings to 3-6″ apart. Prefers deep, well-drained soil & full sun. Harvesting Tip: Harvest parsnips after the first few frosts in the fall, as cold temperatures enhance their sweetness. Use a garden fork to gently lift roots from the soil. Storage Tip: Store harvested parsnips in a cool, humid place like a root cellar at 0–2°C. They can also be left in the ground under heavy mulch to prevent freezing, allowing for winter harvest. |
