Also called Egyptian spinach or Jew’s mallow. Vegetable green popular throughout the Middle East, Africa and Asia. Its use dates to ancient Egypt where it was called “food of the kings.” The plant has anticancer and anti-inflammatory properties, and is highly nutritious, even more so than kale. Leaves are minced and cooked with coriander and garlic and served as a puree on rice with chicken, rabbit, lamb or fish. It has a slightly mucilaginous texture that may take some getting used to but millions will tell you it is well worth it.

Harvesting tip: Harvest young leaves for best flavor when plants reach 30-40 cm. Cut stems about 15 cm from the ground to encourage bushy regrowth. Continuous harvesting encourages more tender new growth throughout the season.
Storage tip: Keep in a plastic bag in the vegetable section of the freezer for up to 3 days.

Son utilisation remonte Ă  l’Égypte ancienne oĂą il Ă©tait appelĂ© la “nourriture des rois”. La plante a des propriĂ©tĂ©s anticancĂ©reuses et anti-inflammatoires, et est très nutritive, encore plus que le chou frisĂ©. Entreposage: Conservez-la dans un sac en plastique dans le rayon des légumes du congélateur pendant 3 jours maximum.
