Tips on how to grow Cauliflower

I have learned so much from growers all over Eastern Ontario and beyond so I really enjoy plant conversations. One of the trickier vegetables for many gardeners to grow is cauliflower. Gaia Organic Seeds have a number of interesting varieties. Here is my interview with Gaia team member Manish:

“I never really focused on growing cauliflower. I was more of a cabbage gal. So what are the basics to making this vegetable happy?”

Manish, “They are mostly cool season crops so choosing the right variety is very important. Snow Crown Cauliflower is best for growing in the summer. Best time to transplant is as soon as the ground can be worked or late summer. They love the cool temperatures of spring and fall.”

“Okay so two planting windows then. Either transplant ASAP in the spring or to grow in the fall.”

Manish, “Yes. All the coloured cauliflowers most certainly do well in cooler temperatures so fall is more preferable for them.”

“There sure are some neat coloured varieties. Can you share your top tips for growing cauliflower?”

Manish, “Growth is significantly delayed if stressed in the seedling stage so make sure you have a healthy seedling when transplanting. Lack of sun, not proper drainage, inconsistent watering and fluctuation in temperatures can cause stress and will significantly delay growth. Temperature fluctuations will also cause it to not form a proper head and to flower early.

“That explains why I didn’t focus on cauliflower. You should have seen my unirrigated farm. That said, the CSA farmer around me often had great cauliflower and home gardeners have the advantage of smaller, easier to manage, plots and access to water.”

Manish, “Fusarium related disease are also common in my experience. So choosing the right variety is key. With good soil, it can be avoided.”

“So once we grow some spectacular cauliflower, how do you best like to use it?”

Manish, “Making cauliflower curry, roasted cauliflower with little salt and pepper is also great. One can even go beyond and make honey garlic cauliflower or baking it with cheese in the oven (just like nachos!).”

“I have to tell you that it is a little embarrassing that I never really grew cauliflower because my kids love it, especially with cheese. Also, I have never tried honey garlic cauliflower. That sounds great.”
