Molokhia, or jute mallow, is a heat-loving leafy green with thick, mucilaginous leaves used as a staple vegetable and thickener in North African, Middle Eastern, and Japanese cuisines. It is extremely productive in warm summer conditions and rich in vitamins and minerals.
